Vanilla Almond Pancakes

I am now home in Chicago to visit family and friends- and to see my sister graduate from college! Congratulations Rachel!

When I woke up this morning I was looking through my pantry and noticed some almond flour. I got pretty excited- I love to play with new ingredients!

I decided to try out some almond flour pancakes.
Vanilla Almond Pancakes

Ingredients:

  • 1/4 cup almond flour
  • 1/4 cup whole wheat flour
  • 1/2 cup almond milk
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 Tbs sugar
Directions: Combine all ingredients together. Stir. Sizzle. Serve.
I really, really loved these pancakes. They had a really nice texture- Heartier than regular pancakes- but not grainy at all. If that makes sense. The almond flour gives them body- and I love the combination of vanilla and almonds. I topped them with strawberries and some maple syrup. Also, these were super filling. I wasn’t hungry for hours after I ate them! I love that!
