Double Dose of Pancakes

I promised my roommate pancakes this morning to say “thank you” for always driving everywhere. I was looking online for some recipes that only involved ingredients I already had on hand, and I found these two recipes:

Pumpkin Spice Pancakes

I made these and added a maple cinnamon glaze…

Peanut Flour Pancakes

I had already made the peanut flour ones my own way, but I opted for her non-vegan recipe instead. Plus I added bananas and chocolate chips…

First up- Pumpkin Spice Pancakes.

Maple Cinnamon Glaze:

Ingredients:

  • 1/2 cup powdered sugar
  • 1 Tbs milk
  • 1 tsp cinnamon
  • 2 Tbs real maple syrup

Method: Just mix it all up with a fork until you’re happy with the consistency, and simply drizzle over your pancakes. (This would work for icing cookies as well.)

Mmm these pumpkin spice pancakes tasted so good with that glaze- almost like cinnamon rolls.

And next up…

Peanut flour pancakes with chocolate chips and bananas.

You can’t go wrong with that!

Sometimes there’s nothing better than food to say “Thank You”.
