Peanutty Pancakes with Spicy Apple Compote

I. Love. Trader. Joe’s. Peanut. Flour.

I have so far used it to make a peanut butter spread (just add water and spread on toast!), to thicken a curry soup, added it to oatmeal, and now to make pancakes. Peanutty pancakes. Mmmm…

Whole Wheat Peanutty Pancakes {vegan!}

(this recipe serves one.)


  • 1/3 cup whole wheat flour
  • 1/2 cup almond milk
  • 2 Tbs peanut flour
  • 1 tsp baking powder
  • Handful walnuts
  • 1 Tbs brown sugar
  • 1 Tbs olive oil (or other oil will work I just didn’t have any on hand.)

Method: Mix all ingredients in bowl until batter is formed. Heat skillet over medium flame. When hot, spray with cooking spray and spoon batter. When all the little bubbles form, it’s time to flip. Enjoy stacked up with a drizzle of honey and some spicy apple compote! (recipe below…)

Spicy Apple Compote

‘Tis the season for all things spicy- no, not hot spicy, but clove/cinnamon/nutmeg spicy. On that note…


  • 1 apple (I used Braeburn)- cubed (the smaller you cube the faster it cooks–>the sooner you eat!)
  • 1 Tbs brown sugar
  • 1 Tbs water
  • pinch cinnamon, pinch cloves, pinch nutmeg (or any combination there of…use what you got on hand!)

Method: Add all ingredients to small sauce pan and let simmer for about 20 minutes, until apples soften. Taste test to find out if they’re there yet. You’ll know…

Mmm mmm mmm these were so delicious and nutty. Such a great consistency, just sweet enough, they have a crunch from the walnuts and the spices just warm your insides.

Not gonna lie I was glad I made just this amount, for I would have eaten a ton more. Instead of making a whole ‘nother batch, I went for a run on the beach by my house. My first time running ON the beach, and it was sooo nice.

The tide is so perfect after noon- it recedes just enough so that there is a VERY shallow layer of water on the sand, that you can run on  but not get wet, and reflects the clouds, the ocean, and the buildings around you. It’s perfectly firm to run on too!

And the designs from the little branches from the ocean are so awesome. So much to look at between these, the surfers, the clouds— I’m definitely gonna try and get out running more often!
