Enjoy these Oatmeal Banana Pancakes on a rainy morning!

Oatmeal Banana Pancakes


  • 1/2 cup spelt flour
  • 1/2 cup rolled oats
  • 1 cup almond milk
  • 1 Tbs baking powder
  • 1 Tbs honey ( I used raw)
  • 1 banana, sliced into coins
  • unsweetened coconut flakes (optional)
  • honey or maple syrup for drizzling

Directions: Heat pan over medium heat. Spray and let warm up. Meanwhile, blend oats in blender until a flour forms. Add the rest of the ingredients into the blender (minus the coconut and banana) and blend until just combined. I like to wipe the pan with a paper towel to remove any excess oil at this point- I find it helps the pancakes more evenly brown (whereas the first pancakes is usually worse looking than the rest, ya know? This step helps remedy that.)Pour or spoon some batter onto the pan, add your banana coins and coconut if you want, wait for little bubbles to form, and flip! Enjoy stacked up with maple syrup or honey to sweeten.
