Bagel Sandwich

This sandwich brings me back to my Howbowda Bagel days in college. Ahh I miss those days…

Start with a Whole Wheat bagel…hollowed out.
Top one side with riggot and basil
Then spinach, tomato, and parmesan
Top the other half with hummus, avocado, red onion…
Add roasted red pepper
And patty pan squash…
Pack for work- don’t forget the tin-foil for toasting!
Toast for 5 minutes, and enjoyyy
