Playing With My Food

Happy Monday! Did work go by as fast for everyone as it did for me today? Hope so! πŸ™‚
So I mentioned that I went to the Lincoln Park Farmers’ Market Saturday in my last post...
Now the question becomes…what do I do with all of those veggies?
Well, some I ate raw…

^^Peels to orange!^^

Aren’t vegetables just the prettiest! 
Look at these!
^^Golden beets^^

^^Trimmed off tops and bottoms^^

^^Wrapped in foil^^
Roasted at 350 convection for an hour and 15 minutes (times vary depending on size of beets.)

^^All done and Tupperware-ed up for the week^^

Remember when I made red baby beets?
Next to roast was these beautiful Russian Blue (but kinda purple) potatoes:

^^While you chop potatoes, keep the chopped in water^^
…This is to provide the water the potatoes may have lost, dissolve the starch and make them less sticky. Plus I think it helps them crisp (from getting rid of starch).

I then chopped red potatoes (not from farmers’ market)

^^Lay potatoes on baking sheet and drizzle lightly with olive oil.^^
^^Roast at 350 convection for 20ish minutes until crisp^^
Sprinkle with salt when they come out of the oven, and pepper too.
I wanted to make these on the 4th of July- but couldn’t find the blue potatoes then! Oh well…
Running Recap:
So Sunday morning I was supposed to run 7 miles! My longest run yet. I mapped my run and set out. It was going really well until I was an hour and ten minutes into it (shoulda been about done), but I was somehow soooo far from home! Ut oh…I messed up! I accidentally ran to a street called Westminster instead of Westleigh…I had to walk 2+ miles home. I got home and mapped the route I actually did and it turned out it was 9.8 miles! Took me exactly 2 hours. The bad part? I thought I had over done it. My body was hurting a bit, not bad or anything, but a bit. Walking is hard after 7 miles of running! The good part? I was on foot for 2 hours- hopefully about the same amount of time I’ll be running for for the 1/2 marathon. And I felt fine! Sure, I’d have 3 more miles, but ONLY 3 more miles! I think I can do it- and I’m feeling good about it!
When I got home I was exhausted to say the least. All I wanted to do was collapse, but I foam rolled to prevent soreness and injury, and did some yoga stretches. I then made my favorite smoothie EVER!!! Hit. The. Spot.

Also:

That’s a raw red carrot, raw rainbow cherry tomates, raw kale, and globs upon globs of hummus! All on a Flat Out Wrap.

My mom asked my sister and I if we wanted to go to my aunt’s to hang out. Since all I wanted to do was play dead on a couch, I said no. But then she reminded me…It was the neighborhood festival and they had eggplant sandwiches. But not just any eggplant sandwich…

Eggplant+me=LOVE. Eggplant parmesan+me=LOVE for LIFE!

 For dinner I needed something lighter.
My mom made me 2 slices of sesame Ezekiel Bread with hummus, hard boiled egg, and hot sauce.

After that I went to Danielle’s for a private pilates class πŸ˜‰ She is getting pilates certified and needs hours, so of course I’m happy to be her guinea pig! I love pilates! She is intense- it was such a hard pilates class! And she even taught me some new stuff- which I didn’t think was possible at this point…
Afterwords we just had to go to McDonalds for a 47 cent vanilla cone- I mean that has to be one of the best deals on earth. Really. 47 cents for a good sized, creamy, low fat vanilla cone? And fast? Yes please!!!!
Lunch today was a variation of last night’s dinner (as my lunches usually are…)
^^Subtract bread, add feta, pine nuts, and tomatoes^^

^^Roasted potatoes with parmesan cheese^^
I have some other stuff cooking up now…more on that later.
But here’s a clue:
