Snacking my Day Away

This is gonna be a quick one…it’s 9:30 pm and I’m completely exhausted. I woke up, ran 3.5, worked, then babysat. zzzzzzzzz is how I’m feeling.
When I got to babysit, Will (below) immediately asked me for my camera. I let him use it last time, and now I think that’s all he likes me for :(. He snapped a bunch of random pics of the carpet and the walls and some toys, but I got this one of us 2. How cute is he!!!
Let’s backtrack to dinner last night…I made curried quinoa salad, and my dad made shrimp on the barbie and also this orange cauliflower he found at this market downtown. Pretty sweet huh? Well, the whole meal was so good- but it’s no so pretty. And I’m not happy about that. Too yellow, orange, and brainy looking to me.

The curried quinoa is on the bottom. I usually make it with cous cous, but we were outta that- and quinoa subbed in quite nicely.

To make quinoa, you basically do 1 part quinoa to 2 parts water. I did 1 cup quinoa, and therefore 2 cups water. But I jazzed it up. I first sauteed minced garlic and onion at the bottom of the pot in some olive oil. Just when it starts to smell good, add the quinoa. Stir that up a bit. Then add the water. Stick the cover on, bring it to a boil, then simmer for about 15 minutes. Then, fluff it up with a fork.

To make it curried, add 2 tbs curry powder. I also added salt, pepper to taste, dried cranberries, cilantro, slivered almonds, squeezed 1/2 a lime and 1/2 an orange on it (citrus was lying around the counter from the glazes my dad made for the shrimp, so I made due with what was in front of me). This is one of my favorite salads. It’s so healthy and sooo tasty. It’s good hot or cold too…such versatility!

The cauliflower was roasted like here.

And the shrimp- well, that’s my dad’s secret magical ways. There is no explaining. He whips up some glazes, brushes the shrimp w/ it, and grills them to perfection every time. 🙂

This morning before my run I had an almond butter topped waffle with 1/2 banana. After my run and shower I whipped up my tastiest smoothie yet. And most vibrant as well, very welcoming to spring!

What the heck is in there? A handful of baby spinach, 1/2 banana, frozen mango (TJ’s of course), 1/4 cup greek yogurt, chia seeds, and almond milk- just enough to allow blending. So creamy and thick- hit the spot! If you’re wondering, I PROMISE you cannot taste the spinach.

And for lunch, leftovers from last night.
Snack again – oh god I snack a lot- a hard boiled egg, an apple, and some dates.
For dinner I just had a bowl of cereal, handful of almonds and this AMAZING AMAZING AMAZING fruit that I had been wanting to try, and was SOOO HAPPY that the people I babysit had one at their house!!! (Thanks Saralyn :))
^^A Champagne Mango^^
Okay the taste is very similar to a regular mango, but it’s not so fibrous and stringy. Which means I give it a Triple A+++!!!!!
I missed alll my shows tonight (except Idol)- and what a great night of TV it was. I can’t wait for a catch up day/night to just lounge and browse through Lost, GLEE!!!!!, Parenthood, Tara, and Nurse Jackie. 
But for now, I’ll leave you with Justin Bieber’s SNL performance. I’m in love. He’s so cute!
