Sunless Sunday

It’s one of those mornings you wake up and wanna go back to bed. But since I’m me and sleeping in is basically impossible, I got up, ate breakfast, anddd now I’ve been just laying on the couch watching TV for 2 hours, Facebook browsing.
I first want to talk about this food-blog inspired oatmeal I’ve been eating and LOVE. In a small pot I just add 1/4 cup of oatmeal and 1/2 cup skim milk. I also smash up a banana (preferably on the very ripe side), add 1 scoop Chia, 1 Tbs pumpkin, and cinnamon and pumpkin pie spice (optional). Stir till it boils then to your desired consistency and creaminess. Then I top it w/ a spoonful of almond butter and a little bit of maple syrup for sweetness. So nutritious and so very yum.

And check out these pancakes I whipped up yesterday morning. In the mix is 1 cup whole wheat flour, 1 cup very vanilla soy milk, 1 egg, cinnamon, pumpkin, chia, 1 tsp baking powder, 1/2 tsp baking soda, 1/8 cup brown sugar, pinch salt. I just sprayed and heated the skillet, mixed the batter, poured, flipped, and that’s it. I topped with maple syrup and almond butter. Almond butter is so good on pancakes.

^^Can’t forget about my soy late :)^^

Ok, so not to act so surprised, since I live in Chicago and everything, but REALLY? 60 degrees and sunny, in T-shirts one day and blizzard the next? How’s that for the first day of spring!? It makes me think of this idea I once had…would it be cool or just annoying to instead of having 4 seasons, to have the seasons alternate every 4 days. So one day, summer, the next fall, then winter, then spring…and repeat. I think it could be fun. As if it could potentially happen..ha!

Lastly, a short review on Alice in Wonderland… I liked it. Didn’t love it. As I should have guessed since it was a Tim Burten directed movie with Johnny Depp and Mia Wasikowska, the movie was dark and was actually a recurrence of the “Alice in Wonderland” dream as “Alice in Underland”. It’s more about Alice’s transition and predicament in growing up and letting go of her childhood dreams and fantasies versus moving onto adulthood and doing what she is “supposed” to do. In this sense, I really enjoyed comparing my life to hers and connecting the similar aspects. Something I really enjoyed was the juxtaposition of colors and how that set the tone of many scenes. I thought the acting was okay, not amazing, and the character development along the same lines. If not for 3D Imax, I’d’ve liked it much less.

Weekends speed by way too quickly, I’ll say it again and again. Sigh. Time for some pilates then lunch with my papa. Enough of being a couch potato. Adios enjoy your Sunday 🙂
